Wunderthin
A fat and egg substitute
for cooking, baking and salad dressings

12 oz. prunes
3 C water
3 T unbleached lecithin
1/4 t citric acid

Cover prunes with water and bring to a boil. Cool. Blend with all other ingredients until smooth. Pour in a clean quart jar and refrigerate. Keeps about one month in the refrigerator; indefinitely in the freezer.

Wunderthin is Healing Heart's version of a commercial fat substitute made by Wonderslim. It is easy to make and has the same ingredients. The directions on the jar say that 1/4 cup of the product replaces 1/2 cup of butter, oil or margarine. A one-for-one ratio may yield better results.

When cooking with Wunderthin, reduce the amount of sugar in the recipe as there is natural sweetness in the prunes.

Makes about 31/2 cups or 14 - 1/4 cup servings. Very low sodium: 3.8 mg.

Per 1/4 cup serving: Calories 76.6, Fat 0.74 (8.5% cff), Carbohydrate 17.1 g., Protein 0.56 g.

Healing Heart Hint:
Unsweetened applesauce can be used to substitute for oil, butter, or margarine in most baked goods. Use the same quantity applesauce as oil.
