Quick and easy southwest snack
4 flour fat-free tortillas, 10-inch
½ C black bean dip or refried black beans
½ C romaine lettuce, chopped
½ C diced tomato
1 T cilantro
½ C canned corn kernals
½ C salsa
¼ C law fat soy cheddar cheese, shredded
½ C sour cream substitute (optional) recipe
Dice tomatoes. Chop cilantro and mix with tomatoes. Chop lettuce. Place 2 tortillas between a damp paper towel and microwave for 20 seconds. Warm black bean spread, about 1 minute in microwave. Place ¼ of black beans and salsa on each tortilla. Top with ¼ lettuce, tomato and corn. Top with 1 T of cheddar cheese.
4 servings, each 405 calories: 5% from fat (1.9 g), 47% from carbohydrates (42.0 g), 48% from protein (42.7 g). Sodium 738 mg, Fiber 7.8 g.
Note: This recipe uses low sodium salsa, cheese, tortillas and beans. Some commercial products can be very high is sodium; if on a low-salt diet, read labels carefully.
