Sour Kreme

This non-dairy substitute although very low in fat, is slightly higher than our 10% limit and is much lower in fat than commercial products. Used sparingly on many low fat dishes, the total meal can still meet our 10% calories from fat limit.


1 package Mori-Nu Lite extra firm silken tofu
3 T Better-than-Milk soy milk powder, Original
1 or 2 T white vinegar (see Hint below)

Put tofu, soy milk pwder and vinegar in a blender and blend until completely smooth (a minute or two).

32 (1 T) servings, each 7.6 calories:   15% from fat (0.14 g),  33% from carbohydrates (0.68 g),  52% from protein (1.1 g).  Sodium 13.8 mg,  Fiber 0 g.


Healing Heart Hint

Mori-Ni tofu does not require refrigeration until after the package is opened. It can be found in most health food stores and many supermarkets, sometimes in the chill section.

Better-than-Milk soy milk powder comes in a large round container, about the size of some oatmeal cans. There are many flavors, but for this recipe use only the original, as the others have vanilla or other flavors in them.

One T of vinegar makes this only mildly sour. For a more traditional sour taste, use 2 T vinegar. Start with 1 T and then add more until you reach the desired sourness as your blend.
