Tasty Native American Dinner
2 C low-salt beans, kidney, black, pinto, garbanzo or any combination
2 C corn
1 C butternut or acorn squash, pre-cooked and cubed
½ C maple syrup
1 T dill
Combine all of the above ingredients in a saucepan. Heat until thoroughly warm for at least 5 minutes.
Can be served as a vegetable dish or over brown rice as a complete meal.4 servings, each 299 calories: 4% from fat (1.34 g), 83% from carbohydrates (66.22 g), 13% from protein (10.47 g). Sodium 276 mg, Fiber 6.33 g.
