Scottish Fruit Scones

Enjoy these fat free treats for holidays or anyday for breakfast, snacks or desert


2 C whole wheat flour
1 t baking powder, low sodium
½ t baking soda
1½ C plain soy or rice milk (fat-free or low fat)
1 t cinnamon
½ t salt
1 t brown rice syrup, sucanat or sugar
1 C raisins
½ C dried fruit
I T lemon zest

Preheat oven to 400 F (200 C, GasMark 6). Place all dry ingredients in a bowl, add liquid, raisins and dried fruit to center of dried ingredients, slowly fold from the center, mixing as little as possible to blend ingredients. On a non-stick baking sheet drop by tablespoon- size scoops on sheet and bake 10 to 12 minutes at 400 F. Remove from oven to cool immediately. Serve warm with fruit preserves.

12 scones, each 104.5 calories, 4% from fat (0.52 g), 84% from carbohydrates (23.6 g), 12% from protein (3.31 g). Sodium 37.5 mg, Fiber 3.3 g.


Healing Heart Hint:

Baking with no fat requires attention to two important differences: (1) Batter should be mixed as little as possible (overmixing activates the gluten in the flour and makes things rubery) and (2) baking time is critical - overbaking will yield dry or hard results.
