Enjoy these fat free treats for holidays or anyday for breakfast, snacks or desert
Preheat oven to 400 F (200 C, GasMark 6). Place all dry ingredients in a bowl, add liquid, raisins and dried fruit to center of dried ingredients, slowly fold from the center, mixing as little as possible to blend ingredients. On a non-stick baking sheet drop by tablespoon- size scoops on sheet and bake 10 to 12 minutes at 400 F. Remove from oven to cool immediately. Serve warm with fruit preserves.

Baking with no fat requires attention to two important differences:
(1) Batter should be mixed as little as possible (overmixing
activates the gluten in the flour and makes things rubery) and (2)
baking time is critical - overbaking will yield dry or hard results.
