Cajun smothered corn dish, slightly spicy and crunchy
4 C frozen corn or kernals from 8 ears of fresh corn
2 T veggie broth or balsamic vinegar
1 medium onion, chopped (½ C)
1 small green bell pepper, chopped (½ C)
1 medium tomato, diced
¼ t ground or flaked red pepper
¼ t salt
¼ t ground black pepper
In a 3-quart saucepan, cook onion and green pepper in veggie broth or balsamic vinegar about 5 minutes or until tender. Stir in corn, tomato, salt, black pepper, and red pepper. Cover and cook over low heat about 20 minutes or until corn is tender. Season to taste.
6 side-servings, each 175 calories: 6% from fat (1.4 g), 82% from carbohydrates (41.4 g), 12% from protein (6.1 g). Sodium 146 mg, Fiber 1.2 g.
