A fruit and wine dessert or mid-afternoon treat
10 C melon, cubed or balls (see Hint below)
½ C white wine
¼ C orange juice
2 T honey or brown rice syrup
½ t real vanilla extract
½ t cinnamon
¼ t black pepper, freshly ground
Place melon cubes in a large bowl. Combine all other ingredients in a small bowl. Pour over melon and toss gently. Chill 1 to 4 hours before serving.
10 - 1C servings, each 85 calories: 8% from fat (1 g), 88% from carbohydrates (18 g), 4% from protein (1 g). Sodium 12 mg, Fiber 1 g.
Healing Heart Hint Use any melon or combination, such as watermelon, cantaloupe or honeydew.
Any inexpensive white or rose wine works well for this recipe.
A non-alcoholic wine will yield the same flavor for those who for those who do not prefer alcohol.
