Potato Pancakes (Latkes)
Traditional European flavor without eggs, dairy or fat
1½ C shredded potato (can use frozen)
2 T oat flour (see hint below)
¼ C chopped onion (or 4 T dried onion)
¼ C water
pinch of salt, fresh ground black pepperMix flour and water, add onions and potato. Add a bit more water if needed to form thick pancake batter. Fry till golden brown with some darker spots in a high quality non-stick pan.
Serve with unsweetened applesauce or preserves. Makes 4 large pancakes.

Healing Heart Hint When a recipe calls for small amounts of oat flour, you can make it from rolled oats or oatmeal in a blender or electric coffee mill. Many other grains can be made into flour or breading mix this way.
