Cranberry Pumpkin Bars

A quick portable snack or dessert

jar baby food prunes (2nd stage) or 1/8 C Wonder Slim
15 oz canned pumpkin
C cranberry juice cocktail
1 T low-fat (lite) tofu
2 T EnerG egg replacer
1 C whole wheat flour
C rolled oats
1 C succanat or light brown sugar
1 T pumpkin pie spice
t baking soda
1 C dried cranberries (craisins)

Preheat oven to 350 F. In a small bowl, combine cranberry juice and EnerG egg replacer and add in remaining wet ingredients, mixing well. Mix dry ingredients together in a separate large bowl. Add wet to dry and stir gently until just mixed, but do not overmix. Pour into 9" x 13" (23 x 33 cm) nonstick dish and bake for 25 to 30 minutes.

18 bars, each 80 calories: 4% from fat (.35 g),  80% from carbohydrate (18 g), 16% from protein (2 g),  Sodium 49 mg, Fiber 4 g.
