5-Minute Bok Choy
& Oriental Mushrooms


1½ C vegetarian broth
  (or Chick'n Style Seasoning & water)
1 large clove garlic, finely chopped or pressed
1 green onion, sliced fine
5 button or straw mushrooms, cut if necessary
5 shitake mushrooms, cut into ½ inch pieces
  (rehydrated or fresh, no stems)
2 T fresh ginger, finely chopped or pressed
4 C bok choy, chopped (or 4 baby bok choy)
2 T corn starch mixed with ¼ C of cool water

Pour broth into a skillet, add half the green onions, garlic and ginger. Sauté in broth -no oil- for a few minutes, and then add mushrooms.

Steam bok choy in a microwave for 2½ to 3 minutes, mixing and checking every minute. Bok choy can be prepared in a vegetable steamer if preferred.

Thicken the broth with corn starch. Make it slightly thicker than looks right, as the moisture from the bok choy will thin it a bit as it cooks.

Toss in the bok choy and mix. Serve over rice, your favorite grain or a baked potato.
