Not your usual bean dish
1/4 C veggie broth
2 cans beans (kidney, black, pinto, garbanzo or any mix)
1 large sized onion, chopped
1 large clove garlic, minced
3 large tomatoes, chopped
1" piece of ginger root, finely chopped
1/2 t black pepper, freshly crushed
3 stems cilantro (Chinese parsley), chopped)
pinch of turmeric
water, as needed
Salt or Bragg's liquid aminos, optional
Hot sauce, if desired
Heat veggie broth on medium heat, add garlic, onions, ginger and black pepper. Stir and cook for 3 minutes or onions become trasparent. Add tomato and mix, then turmeric. Cook for another 10 minutes. Add beans and cook for another 5 minutes. If desired, add a pinch of salt or Braggs, soy sauce or tamari. Garnish with chopped cilantro. Serve with rice, pasta, bread, in a baked potato or just by itself.
