"Bettermilk" Biscuits

Fat free, full fiber and non-dairy


1½ C whole wheat flour
½ T baking powder
¼ C prune puree (see Hint below)
¾ C plain soy or rice milk (fat-free or low fat)
½ T white vinegar
½ t baking soda
¼ t salt
½ T brown rice syrup, sucanat or sugar

Preheat oven to 400 F. Thoroughly mix all ingredients except milk and vinegar. Combine the milk and vinegar and add to dough, stir only enough to blend completely . Drop by heaping spoonfuls onto a non-stick cookie sheet and bake for 8 to 10 minutes or until slightly browned. Serve with stews, chili or soups. Split and spread with honey for a breakfast treat.

12 biscuits, each 66.9 calories, 4% from fat (0.28 g), 82% from carbohydrates (14.6 g), 15% from protein (2.58 g). Sodium 94.7 mg.


Healing Heart Hint:

Prune puree is easily made by blending pitted prunes with enough water to make a paste. Baby food prunes with tapioca works equally as well. Wonderslim™ and Sunsweet LighterBake™ fat substitutes are mostly prune puree and can also be used.
