Aparagus Vinaigrette

Quick, easy and unusual treat

1 lb (450 g) asparagus spears (16-24), large end trimmed
1/4 C veggie broth or stock
2 T white wine vinegar
1 t soy sauce or tamari
1/2 t grated orange or lemon peel
1/4 t fresh ground black pepper

Lay aparagus out in square microwave dish. Add broth and cover. Microwave for 3 minutes at high. Add all remaining ingredients, cover and microwave for one minute, or until tender. Do not overcook or asparagus will get too soft.

4 servings, each 28.4 calories, 9% from fat (0.34 g), 58% from carbohydrates (5.04 g), 33% from protein (2.85 g). Sodium 46.6 mg, Fiber 2 g.

Healing Heart Hint

Vinegars come in many different flavors. For variety, try a fruit based vinegar, such as raspberry, or a balsamic vinegar, a sweeter, mellow vinegar that has been aged in wood.
